A Korean Autumn Table with Jeoneo, Mushroom Rice, and Radish Soup
Plan one autumn dinner by combining grilled or braised jeoneo with shiitake rice, beef radish soup, and fresh radish salad.
Give rice, soup, fish, and salad separate roles
Choose either shiitake rice or chestnut rice, then add beef radish soup. Use grilled or braised jeoneo as the only main dish. Fresh radish salad uses the same radish while adding a crisp contrast to the hot soup.
Start with the dishes that take longest
Soak the rice and start it first, then simmer the soup. Reserve part of the radish for the fresh salad. Grill or braise the fish close to serving time so its skin and flesh do not sit after cooking.
